Camille A. Parker Executive Chef Camille is welcomed for her experience of growing up at Nani's (she was 11 when Nani's was opened), living & eating in Sicily for six months after graduating from Jackson Hole High School, living & eating in Rome for three years during her undergraduate, and her love and understanding of Italian Cuisine & Culture.
Camille is our authenticity expert. She researches & prepares a classic menu four times per year and is responsible for educating the Chef staff in preparation and cooking methods of each dish, and stays in touch with kitchen reality by doing her favorite thing...cooking on the line.
Now after eight years in our kitchen, and an eight month stint in a high profile NYC restaurant, Camille works with Head Chef Daniel and his kitchen crew from her Chicago home. Camille teaches at Le Cordon Bleu, blogs on the dining opportunities in Chicago, and is seen on NBC Chicago. Daniel Luna Capocuoco della Cucina Daniel has been in Nani's kitchen since 2003, working his way up through the ranks as many chefs have found their way into the exciting and heart-pumping kitchen. It was quite obvious from the beginning that Chef Luna was more than interested in learning Italian cuisine. Quickly he became Camille's 'go to' man and absorbed concepts and techniques and delicate flavor balances and profiles as they were offered. Since the Spring of 2008 Daniel has shown his determination and strength by taking on more responsibility in Nani's kitchen while attending Central Wyoming College School of Culinary Arts. In December 2010 Daniel will graduate with a well-deserved diploma as well as our amazement and pride at his continued accomplishments. Taste trips to Italy are next on his educational horizons. Carol Mortillaro Parker Padrona della Casa It is a rare opportunity that a person is able to work, love, play, encourage, educate, mother, socialize and entertain all the while enjoying every minute of the many opportunities their 'job' presents. I feel truly blessed by the thousands of local and regular customers I have met at Nani's as well as those who have just stopped in once on their way through this amazingly gorgeous part of the United States of America. And, I would be remiss not to mention the (by now) hundreds of young people Nani's has been so fortunate to employ, giving a 'valley start' to so many. Not just a few of Nani's former employees continue to live and work in the valley, and often I have the awesome pleasure of seeing them develop into husbands and wives, Daddys and Mommies, managers or developers of local businesses. Whether customers or employees I get to see them at the grocery or the Farmers' Market or hiking or at my favorite hang outs. Often they visit Jackson, dropping in for a hug and a nice bowl of pasta. Even though I know so many people have enjoyed Nani's over the years, I can't help but feel I have been the biggest winner here...the giving and receiving are a little mixed up for me now.
